Since going on the Whole 30, Ryan’s and my egg consumption has shot through the roof. We were easily on pace to eat over 600 eggs per person in a year. Along with the egg consumption, Ryan resumed experiencing almost daily headaches. It took almost eight months to figure that out and I feel like a dope. His ibuprofen consumption was absolutely frightening, and there was no other food to look to when it came to allergies. I just didn’t want the inconvenience of changing the morning routine.
Finally we took the eggs out and no more headaches for Ryan. Two days ago they came back in and headaches.
Why the headaches? My Oriental medicine doc says that it could be the all the vaccinations – they have egg whites in them and now Ryan is allergic. Ryan had the normal childhood vax, then was vaxed when he entered Army boot camp and then vaxed fully again less than two years later when deployed to Haiti. All that vax could have pushed him over the edge regarding eggs.
My doc said he didn’t think that egg yolks would be a problem and they don’t seem to be based on a trial about 10 days ago. We are going to try them a second time in a few days once Ryan is continuously free of the headaches. Here is the recipe we are going to use: Cardamom Coconut Cream Custard. This recipe has a problem in that it uses rice syrup as a sweetener. Three super ripe bananas will replace the rice syrup. Or, one banana and then banana liquefied in the food processor as a topping. Other good toppings are crispy pecans and fresh strawberries.
In the mean time, I found a really great lamb bratwurst that I will be serving for breakfast. I was focusing on pork sausage, knowing that pork is just plain wrong for many reasons, but Colson’s soccer schedule prevented me from getting to the Farmers market in any coherent and thoughtful way the last couple of weeks. I ended up quickly purchasing at a Farmers Market I don’t normally go to, and that market has grown wonderfully. Now I am torn between my beloved Durham Farmers Market and Western Wake Farmers Market.
Back to the headache issue. I know that we can only do our best, but clearly I didn’t. I was just too burnt out in the kitchen to get rid of the eggs. I should have just dumped them for Ryan instead of poisoning the guy with eggs and ibuprofen all this time. At least I caught on eventually.
Amazing what food can do to hurt and heal us.
