My friend Celia has been tearing it up on the food front lately. I made her coconut milk kefir, double fermented with fresh squeezed apple juice, and I could have cried it was so good. Here is what she did:
- water kefir grains with coconut milk and 1 tsp honey
- ferment 2 days
- strain off grains and pour fermented coconut milk into a jar
- juice a couple of apples and carrots
- mix fermented coconut milk and apple/carrot juice
- put a lid on the mix and let sit for 24 hours
Today she told me she added fresh pressed orange juice to the coconut kefir, fermented it for six hours, and it is deliciously kicking.
Last week Celia emailed this cabbage, sweet potato, apple recipe, which I quickly prepared and can tell you it is immensely good:
- 1 large s.potato sliced thin
- sliced cabbage
- 2-3 apples sliced
- orange juice or tangerine juice
- cardamon
- coconut oil
I layered the s.potatoes on the bottom of a glass baking dish,
then covered with sliced cabbage and then covered the cabbage with the
sliced apples. Then I mixed some melted coconut oil, juice and
cardamon together and poured over top of the apples in the baking
dish. I baked until everything was soft.
That's it from Celia's kitchen. Perhaps I will collect her recipes and then she will make that cookbook, maybe in partnership with Erin, as they are both creating some inspired recipes.
