I no longer bring broth to a full boil. I let it rise to a simmer and then simmer for eight to 24 hours. I rarely simmer over 16 hours. I also now cook it in a large covered Visions glass pot on the stove to reduce contaminants from the crock pot. The broth does not cook down much when using a Visions glass pot.

Weekly Eye Opener – A Laugh

It is an awesome day in North Carolina. There are about four to five inches of snow on the ground and Colson, Ryan and I, along with our neighbors, have sledded for about three hours. Too much fun and too many laughs to put something grumpy and outrageous up for the weekly eye opener!

I did a quick Internet search on laughing, and depending on the site/source, it seems that the average child laughs 300 to 400 times a day, while the average adult laughs about 15 times a day. Spending the morning laughing with kids is a great reminder of how we are meant to be. Ryan and I will certainly hit triple digits today!
