How bad are the changes to nuts (oxidation) when I cook with them? That is a question I have been pondering for a long time. I put some soaked and dehydrated pecans on an apple cranberry crisp that I baked for Thanksgiving - did they oxidize so much that they became a pretty unhealthy food ingredient? I know that heat is bad, but how bad?
We use nuts in lots of ways, and we have learned that if we don't soak them first or if we eat too many they will cause us some serious distress (see Nuts and Whole 30 Update).
