It was hard for us, initially, to avoid wheat, but sorghum is a decent substitute. However, I am now learning that grains must be fresh, and either freshly hulled and ground (within days!) and then fermented, or whole and sprouted, but not whole and ground... Except white rice and corn, because they are radically different. That explains the diet we eventually gravitated to! We pretty much only eat potatoes, white rice and corn for our "bread-type" stuff.
