Next time you go to the library, cruise down the cook book section. Checkout anything that is a low-carb, GAPS, SCD, Celiac, or raw food cook book. You won't use every recipe, so no point in buying, but you will definitely get some ideas of things you can prepare and eat. Also, search grain-free blogs... they have a lot of great recipes out there, and they are free.
Oh, and you can eat your tuna salad with a romaine or buttercrunch lettuce wrap, instead of a grain one :) Elanaspantry.com has some great cracker recipes that are grain-free, as well as bread recipes that are gluten-free.
