This seems to be a week of friends…I am
blogging about their knowledge and how they enrich my family’s life. My friend
Hope, for instance, is a really wise, wonderful and sharing person. The other
day she offered up a recipe for Baked Oatmeal, just when I was looking for
something new.
I of course made it the next day, and to me
it was Heaven. So decadent and almost a guilty pleasure, even though it is
completely healthy and nourishing. I couldn’t get enough of it and ate two bowls.
In response to my Heaven comment, Colson said
it tasted like Hell. Ryan and I almost shot our oatmeal across the kitchen.
Pretty wild description coming out of my almost seven year old. I was
victorious in the end, though, as the next day I served it to him cold with
raw milk and told him that this is how Grandpa eats it. He said he wasn’t wild
about it, but that he would munch on it while the real oatmeal was cooking.
Needless to say, he ate the whole bowl. Ha!
Ryan…he was in purgatory. I committed the sin
of adding diced apples to the recipe. Ryan doesn’t eat cooked fruit, but he had
to this time.
I am recommending Hope’s outstanding recipe
with some of my notes in parentheses, and hope you give it a try. Note that this is not a GAPS-friendly recipe, but a great non-GAPS one.
BAKED
OATMEAL
3 cups of oats
2/3 cup raw honey or maple syrup
2 t. baking powder
1 t. salt
2 eggs
1/2 cup oil
1 cup milk
add mixed dried fruit if desired (i
add all kinds of things)
bake at 350degrees for 30 minutes
My experience:
i soak the oats overnight so i don't
add milk. To soak use 3 cups of water with 5 T whey or kefir
i don't use sugar but sometimes add
maple syrup
i change the amount of eggs
sometimes, also use up whites if need be—
i do a mixture of coco oil/butter
and put some in my pan as well (I used just coconut oil)
dried fruit is really yummy but we
tend towards fresh as it is a good way to use half eaten apples:)
for our family of four this is a
hearty breakfast with another meal's worth left over; we do usually serve with
yogurt
this recipe easily doubles or
triples
