“…and when paste dries it turns to cement.” This is a
quote from our Dr. of Chinese Medicine in Florida when trying to convince
people not to eat flour. He would say it over and over whenever we sat in on
discussion groups. The concept made sense, but it never really sunk in. I thought
“I have digestive enzymes and acids in my stomach, so surely they must break
down that lump of paste.”
This morning I read a great article on Dr. Mercola’s
website: Why
is Wheat Gluten Disorder on the Rise? He explains the
flour, water, paste statement in a way that I do understand it. The article
contains much information about gluten intolerance and Celiac disease.
Since my family began GAPS (Gut and
Psychology Syndrome www.gapsdiet.com) a
year ago, which among other things is a gluten-free diet, Ryan and I learned
that we definitely have gluten issues. We feel so much better without any
significant amounts of grains in our diet. We do eat a Vollkorn bread recommended
by our Dr. of Oriental Medicine, and that doesn’t cause us any discomfort, and
we can now handle the organic pizza from our favorite pizza restaurant. We did
try that pizza six weeks into our GAPS diet, and it made us SICK! Now we are
healed enough to handle it.
We will continue to avoid grains for the most
part, and Dr. Mercola’s article has reinforced our decision.
