My family traveled this past weekend to Roanoke,
Virginia to visit friends. It was a fabulous trip for many reasons. While on
the trip we ate only nutrient-dense food consistent with our diet of the last
seven months. Except one time. We were away from home longer than we intended
and did not have enough snacks to see us through. We stopped at a New York Deli
to have sandwiches. It was my second sandwich in seven months. I had kosher
salami on a Kaiser role with cheese, mayo and veggies. Ryan and Colson had
similar sandwiches. They were tasty, but they also felt empty.
The outcome? Ryan and Colson had digestive upset for a day. I had a piercing headache strike about ten
minutes after eating. The piercing part lasted about ten minutes, and then the
whole headache faded away in about a half hour.
I will not have this lunch again, even after experiencing
stronger health. I do see the outcome as progress, though. I know that we
should not eat this “food”, and I also know that we can eat it with less
discomfort than the past. To me that is a signal that we are healing. We do not
want to return to the days when this type of food does not cause any discomfort,
as that would mean that we had undone all of the healing. It is fun every now
and then to have a reminder of how far we have come.
