I am learning that readers are very interested in recipes, so I thought I would throw one more out there. This dish is based on the Marinated Vegetables recipe from my fabulous Step-Mom. I have been eating and making her Marinated Vegetables for years. I made some for this Thanksgiving, and as usual, I then provided the recipe to my guests. Give it a try before Christmas; you will love it and incorporate it into your own Christmas dinner. This is a fun recipe, so be creative!
Marinated Vegetables:
6 T tarragon vinegar or white wine vinegar
¾ c. extra virgin olive oil
4 T lemon juice
1 t honey (the recipe calls for sugar, but I use honey)
1 T salt (I use less)
1 T dill (I add more)
Mix all ingredients and pour over a variety of veggies. I use cauliflower, carrots, broccoli, cucumbers, celery, black olives, and garbanzo beans. You can also add green beans, mushrooms, or whatever else strikes you. (All of the vegetables are available at the North Carolina State Farmers Market.) Let the veggies marinate for 24 hours. Mix them up every now and then while they are marinating.

This recipe does sound yummy (I wouldn't add dill because I don't like it but it will still be yummy- maybe some fresh tarragon instead). I was thinking though, that for your readers sho may be new to healthy eating, you should clarify that they should use extra virgin olive oil. The other stuff doesn't offer much in the way of health benefits. Love your blog :)
